Quinoa and Bean Salad
One 20 –ounce
can kidney (or black) beans (drained and rinsed)
2 Cups
cooked quinoa (3/4 cup raw)
1 red onion
finely chopped
2 bunches
fresh basil leaves chopped
Juice of 2
lemons
½ cup
extra-virgin olive oil
In a large
bowl, mix together the kidney beans, quinoa, onion and basil. In a small bowl, whisk together lemon juice
and olive oil; season with salt and pepper.
Pour dressing over quinoa salad and toss to coat evenly. Serves
4.
